Asian cuisine, and more specifically Japanese cuisine, is characterised by the use of fresh ingredients, subtle flavours and great attention to balance and presentation.
Sushi
Sushi is a preparation based on rice seasoned with vinegar, which can be accompanied by raw or cooked fish, seafood, vegetables, eggs and other ingredients. The important thing is the sushi rice (shari), not so much the fish itself.
Sashimi
Sashimi is a Japanese preparation consisting of thin cuts of raw fish or seafood, served without rice. Its name comes from ‘sashi’ (cut) and ‘mi’ (meat), literally: cut meat.
Hosomaki
Hosomaki (細巻き) literally means ‘thin roll’ in Japanese. It is a type of maki sushi (sushi roll) that is characterised by being small, thin and having only one main ingredient in the centre.
Uramaki
Uramaki (裏巻き) literally means ‘upside down roll’ or ‘inverted roll’. Unlike traditional maki, in uramaki the rice is on the outside and the nori seaweed is on the inside, enveloping the filling.

Dim sum (點心) literally means ‘to touch the heart’ in Chinese. It is a variety of small dishes served in individual portions or for sharing, usually accompanied by tea, in what is known as the yum cha (tea drinking) ritual.
